Country-fried Steak

(Commonly Known as Chicken Fried Steak)

This is not a Filipino dish but an American southern dish that we all like in my household.

  • 4 cubed steak (tenderized mechanically) or cutlets
  • Flour
  • 1 Egg
  • Salt, Pepper
  • Cooking Oil

Put 1-cup flour in a shallow dish; add 1 tsp. salt and ½ tsp. black pepper and mix well. In a separate bowl, beat one egg, add a little milk or water and stir well.

Flour the cutlet or cubed steak lightly in the flour mix on both sides. Dip it next in the beaten egg then flour it again heavily and press lightly to make the flour adhere to the moistened meat. Let stand for a minute while waiting for the oil to get hot or until the flour absorb some moisture from the egg.

Fry in a hot skillet with about ¼” oil until browned, turn over and repeat on the other side.

Serve with mashed potatoes and gravy, boiled green beans, corn on the cob, or whatever sides you prefer and you have a Southern dinner.
