
Sho mai or shu mai are steamed dumplings. And again, there are many recipes floating around and every one of them is as good as the other.
This is my rendition that I learned from my father.
- Mix Together:
- 1 lb. ground pork
- ¾ cup ground shrimp
- 1 egg
- 1 tsp. salt
- ½ tsp. ground black pepper
- ½ tsp. MSG (optional)
- 1 tsp. sesame oil (optional)
- 1 tsp. Shaohsing wine or Sherry (optional)
- 1/2 cup finely chopped carrots
- 1/2 med. Onion chopped fine
- 1/2 cup finely chopped celery
- ½ can sliced water chestnuts, chopped fine (optional)
- 1 pkg. round sho mai wrapper or Goyza wrapper (smaller)
Place 1 tsp. mixture in each dumpling wrapper and fold up like fluted as above.
Put in steamer baskets and steam for 15 minutes.
Use soy sauce with calamansi juice or lemon juice for dip or any dip you prefer like Sriracha.
