Pork Country Ribs In Homemade BBQ Sauce

This country style pork ribs barbecue is very delicious. I learned this from a friend in Aurora, Illinois many years ago. It is not a Filipino dish and I guess you can call it a Yankee Barbecue (no offense). It does not matter; it is super good and delicious. It may be a little effort to cook it but it is worth your while.
Ingredients/Procedure:
About 2 lb. pork country style ribs (with or without bones).
Generously shake salt and pepper on the pork and let stand while you wait for the charcoal to get hot on the grill. Grill on very hot coals or broil until charred on all sides
They don’t have to get cooked, just seared on the surface. Remove from the grill and place in a Dutch oven or a baking pan.
Meanwhile make the sauce.
- Sauté in 1 TBS butter:
- 1 or 2 garlic cloves, minced
- 1 medium size onions, chopped
- 1/2 green bell pepper, minced
- (Sauté until onions are transparent).
Stir in:
- 1 – 8 oz. can tomato sauce
- 1/2 cup catsup
- 1 TBS. Brown Sugar
- Shakes of Tabasco Sauce (as hot as you like it). You can also use cayenne pepper powder
- Heat until it starts to boil
Pour this sauce over the pre-grilled pork in the Dutch oven or baking pan. Cover and simmer for about 1 hour or until very tender, stirring occasionally to prevent sticking or burning on the bottom.
If the sauce is still thin, simmer uncovered for a few minutes more until reduced and thickened.
If you opt to cook this in the oven, bake uncovered in a 350°F oven for about 1 hour or until tender.
