Pork Roast

About 3.5 lbs. pork butt roast with a little fat on the top.

 Mix:

  •  1 tsp. Garlic powder
  • 1 tsp. salt
  • 1/4 tsp. pepper

Sprinkle and rub on all sides of the pork.  Let stand for about 30 minutes or while pre-heating the oven to 350°F.

Place the pork on a rack in a roaster or a baking pan fat side up.  Stick an oven-proof thermometer in to about the middle of the meat deep.  Make sure the thermometer faces you that it can be read easily.  Or you can use the oven’s thermometer probe.  Set the probe to 145°F.

Bake or roast the pork uncovered for 20 to 25 minutes per pound.  The meat is done when the thermometer reads 145°F.  Take it out of the oven, cover with aluminum foil or the roaster’s lid and let it rest for about 30 minutes while you crank up the oven to 475°F.  Transfer the roast to a shallow pan.  Remove the cover then put it back in the hot oven for 10 minutes or until the top is browned.

Serve immediately.
