
- Ingredients:
- ¾ lb. to 1 lb. Pork belly with or without skin.
- 2 tsp. minced garlic (2 cloves)
- 3/4 cup kimchi cut in 1″ pieces
- 1 1/2 TBSP soy sauce
- 1 tsp. Mirin (sweet wine)
- ½ tsp. Sesame Oil
- Green onions for garnish
- Vegetable oil
Slice pork belly in thin (1/2” strips x 2” long)
Heat 1 TBS. oil in a skillet. Fry the pork on high heat, one layer at a time for about 3 minutes on each side or until pork is browned and crisp. You may do them in batches. Drain the pork on paper towel and set aside.
Pour off the oil but leave 2 TBS of the fat. Sauté the garlic in the remaining oil or fat for a few seconds then add the kimchi. Stir fry on high heat for 2 minutes. Add the pork and toss a few times then add the soy sauce, and Mirin. Stir a few times until heated through. Transfer to a dish and drizzle with sesame oil.
Garnish with the thinly sliced green onions and serve while hot with hot rice.
