Salmon Patties

This patty is in a mini bun or sliders, just the perfect size.

You come home from work and you don’t know what to fix for supper. You don’t have anything thawed but too tired to go out to eat. Well, here is a very quick and easy dish to prepare and is very delicious, provided you have a can or two of Red Salmon in your pantry. Depending on how many people you are cooking for, you may even have some left overs for lunch the next day.

  • 1-14oz. can Red Salmon
  • 1 egg slightly beaten
  • 1 small onion minced (about 3/4 cup)
  • 1 tsp. dry mustard (Dijon in a pinch)
  • 1 ½ tsp. lemon juice (fresh)
  • ½ cup plain bread crumbs (herbed or Italian preferred)

Drain and reserve the liquid. In a bowl beat the egg lightly and add the salmon. Separate with a fork and mix in the rest of the ingredients. The reserved liquid is used only if the mixture is too dry. You may add a spoon at a time to the desired consistency to form the patties without falling apart. Make into patties about 2 inches in dia. about ½” thick. Pan fry in about 1 TBS. oil until desired brownness on both sides.

This is just the basic way to make this. Be more imaginative and creative and you can add anything to the above to your liking, e.g. horseradish sauce, mayonnaise, etc.
