Salisbury Steak

This is a very easy and a quick dish to make.

For four servings you will need:

  • 1 to 1 ½ lbs. ground beef
  • ½ cup breadcrumbs or quick oatmeal
  • 1 egg
  • 1 tsp. salt, ¼ tsp. black pepper
  • 1 medium onion quartered or cut up large
  • 1 small can of mushrooms or sliced fresh mushrooms
  • 1 can beef broth
  • 1 TBS cornstarch
  • Salt and Pepper to taste

Mix the ground beef, oatmeal or breadcrumbs with 1 tsp. salt and ¼ tsp. pepper in a mixing bowl.  Add the slightly beaten egg and mix thoroughly, either with your hands or a large spoon.  Divide it into 4.

Shape ground beef into oval patties. Not too flat but slightly thick and rounded. Brown both sides on a hot skillet with a spoon of oil.  They don’t have to be cooked.  Remove from the pan and set aside.  Add onions in the same skillet and cook until transparent.  Save about ¼ cup of the broth and set aside. Add the mushrooms and the rest of the beef broth to the pan. Heat to boiling then add the browned beef.  Cover and simmer for about 15 minutes or until the meat is cooked. 

Mix the cornstarch in the ¼ cup of beef broth then add to the rest in the skillet while stirring.  It’s done when it gets thickened.  Taste then add salt and pepper to taste.  You can also add a dash of Worcestershire if desired.  Maggi Seasoning is also good. 

Mashed potato, green beans and/or green salad are good accompaniments. 

SHORTCUT

Prepare the meat as above.  Omit the beef broth but add 1 cup water in with the beef after browning them and continue as above. At the end, dissolve Mushroom Brown Gravy Mix with 1 cup water.  Cook until it thickens and cook for another minute on low until the dried mushrooms are rehydrated. I prefer to use McCormick’s with mushrooms but any brand will do.  Add 1 tsp. Worcestershire sauce if desired.
