
This is the same recipe as the Chinese Beef with Green Beans but without the beef.
Mix together and set aside:
- 1 TBS Soy sauce
- ½ tsp. Black bean sauce
- 1 clove garlic, minced
- 1 TBS oyster sauce
- 1 tsp. Sherry or cooking wine
- ¼ tsp. sugar or 1 tsp. Aji Mirin
Prepare:
- 1 lb. or so fresh green beans (Round and thin ones are good to use in this dish.)
- ½ medium onion thinly sliced
- 2 TBS cooking oil
- 1 TBS cornstarch
- ½ cup water
Wash and drain the green beans. Cut the tip and ends and blot with paper towels to dry.
Heat the oil in a wok and stir fry the green beans with the onions until the green beans are blistered and browned on some spots. Remove from the wok and set aside. Add the liquid mixture and heat to boil. Reduce heat then add the cornstarch dissolved in ½ cup water. Heat until thick. Add the green beans, stir a few times to heat through and coated. Serve hot.
The green beans are supposed to be crunchy but yet soft. By removing them from heat before cooking the liquid will not overcook the green beans.
