
I had more patola and I had to dream up dishes to use it in. I came up with this idea that is very quick and no fuss at all.
- 1 package Ramen Noodle Soup, any flavor
- 1 dried Shitake mushroom (Oriental) soaked in water then sliced thin or diced small.
- 1 Patola squash, diced or cubed.
- 3 cups water
- Dash of Oriental white ground pepper
- 1 TBS celery tops (from the young stalks inside the bunch) minced or
- 1 tsp. dried celery leaves
Boil the water and add the Ramen noodles. Simmer until semi done and drop the mushrooms. Simmer another couple of minutes and add the seasoning and the Patola squash. Add some white ground white pepper and cook until the Patola is done. Taste the soup and if it needs more flavor you can add a shrimp or chicken bouillon cube.
This makes 2 to 3 servings.

Another use for Patola is adding it to Pancit Molo, or Pancit Lomi.
