Apple Salad

This is a simple salad but it can be made as fancy as you want it to be and still tastes delicious.

For this one I used the new large apples called Honeycrisp.  They are crisp, sweet-tart and I like them even to eat off the hand.

Peel or not peel, dice the apples and add mayonnaise, and a dash of salt.  Depending on how many apples you are making, add some canned, drained crushed pineapple or pineapple tidbits according to your taste.  Some sprinkles of poppy seeds would be nice too, to add interest. For a little color, you can also add a little grated carrots and/or a few raisins.

You can add Ranch dip, which I made from sour cream and Ranch dressing mix, in addition to mayonnaise if you have it but not necessary.

There is a similar recipe called Waldorf salad and it has walnuts in it.  

 Either way, it is good.
