
This is my favorite recipe of Devilled Eggs. I make it specially decorated for the Christmas Holidays with dill weed and paprika. It is very good and very easy. It will be a hit at a Christmas potluck.
- 12 hard boiled eggs
- 1/3 cup mayonnaise
- 1/8 tsp. salt
- dash of black pepper
- 1 1/2 tsp. dill pickle relish or chopped dill pickle
- 1 tsp. juice from the dill pickles
- Paprika
- Dill weed (optional)
Boil the eggs for about 20 minutes. Drain then cool with cold water. Peel when cooled. Cut in half lengthwise and save the yolks in a bowl. Set the whites aside being careful not to tear.
Mash the yolks with a fork. Stir in the mayonnaise, chopped pickle, pickle juice, salt and pepper. Add more mayonnaise if it is too dry.
Scoop into the egg white halves, sprinkle with paprika and arrange pieces of dill leaves on top. Use a cake decorator if you have one instead of spooning it.
