Tomato Salad

I came across this recipe for tomatoes that is very delicious.  I had a good tomato crop this year so I had to make something with them.

This is very good with small, ripe tomatoes like Cherry tomatoes, Grape tomatoes, Campari tomatoes, etc. 

  • A handful of tomatoes, quartered to make   about 3 to 4 cups.
  • A few leaves of Basil, chopped or slivered
  • A few leaves of Parsley, slivered or chopped
  • 2 scallions (green onions) cut in small rings (the white and light parts)
  • ¼ tsp. salt
  • 1 tsp.  Rice Wine Vinegar (or to taste)
  • 1 tsp. Olive Oil
  • 1/4 tsp. sugar (optional)

Toss together and add some salad greens, preferably arugula when ready to serve and toss some more, lightly.
