

Tomatoes from the garden, June 2018
I came across this recipe for tomatoes that is very delicious. I had a good tomato crop this year so I had to make something with them.
This is very good with small, ripe tomatoes like Cherry tomatoes, Grape tomatoes, Campari tomatoes, etc.
- A handful of tomatoes, quartered to make about 3 to 4 cups.
- A few leaves of Basil, chopped or slivered
- A few leaves of Parsley, slivered or chopped
- 2 scallions (green onions) cut in small rings (the white and light parts)
- ¼ tsp. salt
- 1 tsp. Rice Wine Vinegar (or to taste)
- 1 tsp. Olive Oil
- 1/4 tsp. sugar (optional)
Toss together and add some salad greens, preferably arugula when ready to serve and toss some more, lightly.
