Pork Chops (Thick)

  • 2 or 3 pork chops 1” thick or thicker.

Mix:

  • 1 tsp. garlic powder
  • 1 tsp. salt
  • ½ tsp. pepper

Sprinkle on both sides of the pork chops.  Pierce with a fork on several places.

Let stand for a few minutes to let the seasoning get absorbed.  About 30 minutes or so.

Preheat oven to 400°F.

Heat 3 TBS. oil in a heavy skillet (preferably cast iron) until very hot.  Sear the chops in batches if all won’t fit, 2 minutes on both sides.  Transfer to a baking tray if all won’t fit in the skillet.  Bake for 15 minutes or until no longer pink.  Internal temperature should not be less than 145°F.
