New potatoes were added to this green beans because my husband requested them.
This was just canned green beans but cooked to add interest and flavors.
- 2 cans Green Beans
- 1 clove garlic smashed and minced
- ½ medium yellow onion minced
- 2 slices bacon diced
Cook the bacon pieces in a skillet until brown and the oil is extruded. Remove from the skillet and set aside or drop in the onion and garlic with it (after it is cooked) and sauté until the onions are translucent.
Add the green beans undrained. Let boil and cook on med-low for a couple of minutes. Salt and pepper to taste.
If you want to include small new potatoes, drain the liquid from the green beans into the skillet and cook the potatoes without the green beans until they are cooked and done. Then add the green beans and let boil to heat the beans. Add water if necessary. Season to taste.
Fresh green beans are actually better.
Follow the sautéing of the garlic and onions in the bacon bits. Add 1 cup of water, boil then add the fresh cut green beans. Cook until tender. Season to taste
