

Adobong Mani
This is a very popular snack in the Philippines and I have not found commercial peanuts cooked the same here in the U.S.
My husband had not had this at all and he loves peanuts, roasted or pan-fried. He was surprised at how good it was, he raved about it. He even took the jar to work and said it is so good he wanted it for himself and did not want to share it with the people at work.
- 1 pound raw Spanish Peanuts
- 3 or 4 cloves garlic, crushed and sliced thin
- 1 tsp. very fine salt (I crushed 1 tsp. salt with a mortar and pestle)
- ¼ inch deep cooking oil or peanut oil
Heat the oil in a heavy cast iron skillet until hot but not smoking hot. On medium low, drop in the peanuts and stir for a minute then let it cook with occasional stirring for 6 minutes. Add the garlic and let it cook, stirring for another 4 minutes or until the garlic is browned but not burned. Remove from heat and transfer the peanuts with the garlic on a paper towel lined cookie sheet. Sprinkle with the salt and turn over once or twice to cover the peanuts uniformly. Cool completely. The peanuts should be crunchy when cooled.
