Ham and Eggs

Good to the bone. Well, I sliced the rest of the ham this morning for breakfast (see 15 Bean Soup) but I didn’t figure I had enough to serve to my husband and me so I thought of cutting them in small pieces and cooked them with eggs.

Here is the result, like ham and egg omelet, sort of, or you can call it scrambled egg with ham.

We had more than enough for breakfast with buttered toast.  Even our dogs had a good breakfast this morning.

Heat a little butter in a skillet or bacon grease and stir in the cut-up ham.  Cook it for a minute or two until heated through and pour in some salsa.  Heat through then add the beaten eggs.  Cook until set. 

If you don’t have a prepared salsa on hand, do it the long way.  Chop a tomato, onion, bell pepper or jalapenos and one clove garlic and sauté them.  Add the ham, then the eggs. 

Nothing is wasted and it is very good and delicious.  The ham bone will not be wasted either because it will be good cooked with a pot of beans later.  Meanwhile, it is in the freezer until ready to use.
