
I don’t know how I remember this because I’ve never made it before or have eaten it since I was a very young kid.
I think it was a weekend. Papa and I were looking for something to snack on sometime in the afternoon. He saw a few Pandesal (hard rolls) left over from breakfast but we could not find any appropriate meat for sandwich making. We found a couple of eggs in the fridge and he concocted this fried bread. I have no idea where he got the idea from but we both liked it.
A few weeks ago I had half of French bread in the pantry that needed to be eaten or thrown away. I was a little hungry and this dish just flashed in my head. Remembering the taste on my mind, I made the same concoction. It is like making French toast except there is no sugar.
All you need:
- A few bread slices, hard rolls preferred (old bread is perfect)
- 1 or 2 eggs slightly beaten with 1TBS milk
- 1 scallion (green onion) chopped in rings
- Salt and pepper
Mix the eggs and milk. Add about 1/4 tsp. salt and a dash of pepper. Heat an oiled skillet. Dip each slice of bread in the egg mixture both sides. Sprinkle one side with some green onions then toast-fry both sides. You can use butter to oil the skillet or olive oil. Sprinkle cheese on top or mix the cheese with the egg if you like. You can also add some other stuff you would think might be good with it.
They should be crisp at the edges, moist and soft in the middle. This is good as a snack or use as a side dish to any meal.
