
There are many fruit salad recipes floating around but this one was my own concoction and some may even call it Tropical Fruit Salad. Nevertheless, my kids always ask for this on holidays or when there is a big get together.
Some eat this with the meal and some eat it like a dessert.
- 2 large cans Fruit Cocktail in heavy syrup
- 1 small can Pineapple tidbits
- 2 cans Mandarin segments
- 1 cup small Marshmallows
- ¼ cup Coconut flakes, sweetened
- 2 TBS chopped pecans (optional)
- 2 cups Cool Whip (more or less)
Drain the canned fruits and mix all the ingredients except the Cool Whip.
Fold in the Cool Whip.
Cover and chill in the fridge for a few hours. You need to prepare this ahead of time so you can keep it in the fridge so the flavors and the sweetness of the marshmallows and the coconut will meld together.
The Extra Creamy Cool Whip is a better choice if available.
The recipe above is just a guide. You can put as much or as little of any ingredient as you prefer or even omit some. And it can be cut in half.
One of my daughters doesn’t like chopped pecans in the salad so I omitted it in this batch. Nevertheless, it gets eaten up at every party.
