
Mix together in a large bowl:
- 1 ¼ cups all purpose flour
- ½ cup sugar
- 1 tsp baking powder
- ¼ tsp baking soda
Stir in with a spoon:
- ½ cup butter, melted
- ½ cup milk
- 1 egg
- 1 tsp vanilla
Mix with a fork in a small dry bowl until crumbly:
- ½ cup flour
- 2 TBS sugar
- 2 TBS melted butter
Pour on the batter:
1-21oz. or 22oz. can cherry pie filling with added 1/4 tsp. lemon extract (optional)
Procedure:
- Mix first four ingredients
- To flour mixture, add ½ cup melted butter, milk, egg and vanilla.
- With a spoon, beat until well mixed then pour batter into a greased and floured 9 in. round or square pan.
- In small bowl with fork, combine ½ cup flour and 2 TBS. sugar and 2 TBS. melted butter until mixture resembles coarse crumbs.
- Sprinkle half of crumb mixture evenly over top of batter in pan.
- Stir lemon extract (optional) into cherry-pie filling and spread on top of the crumbs in pan.
- Sprinkle the rest of the crumbs on top of the cherry-pie filling in the pan. Bake in 350°F – 1 hour (golden top)
