
Ingredients:
- 1 lb. ground beef or pork or combination
- ½ medium onion minced
- 1 large clove garlic (1 tsp. minced)
- 1 Roma tomato diced
- 1/2 bell pepper minced
- 5 eggs slightly beaten
- ½ tsp. salt
- ¼ tsp. black pepper
- 1 tsp. soy sauce (optional)
- ¼ cup green peas or carrots or combination (optional)
- Cooking oil
- ¼ cup water
Saute garlic and onions in 1 TBS. cooking oil. Add the tomatoes when onions are translucent and soft. Cook the tomatoes by pressing and stirring until limp and cooked. Add the meat, break it up while pressing and stirring until browned. Add about ¼ cup water if it is getting dry. Add the peas if using and bell peppers. Add the seasonings. Cook on medium-low heat and simmer covered until tender, about 5 minutes checking and stirring occasionally to prevent from burning and sticking to the pan. Taste and adjust the salt to your liking.
Remove from heat and let cool. Add to the beaten eggs and mix thoroughy.
To fry, ladle about ¼ cup of mixture onto heated non-stick skillet brushed or sprayed with oil. Maintain medium-low heat. Shape the patty into rounds like pancakes, about 3 to 4 inches diameter. Cook until the edges are browned, about 3 minutes. Flip carefully and cook the other side.
Do them in batches and keep warm in a low heat oven until all are done.

Garnish with chopped green onions if desired. It is good eaten at breakfast, lunch or merienda with rice and banana ketchup or tomato ketchup.
