(With or Without Crab Meat)

Blend together (with a fork):
- 1-8oz. Cream Cheese (at room temperature)
- ¾ cup Mexican blend cheese
- ¼ tsp. salt
- 2 tsp. Vinegar
- ½ cup cooked, shelled crabmeat (if using)
- ¾ cup seeded, diced pickled jalapenos
You will need 3 separate bowls of:
In one bowl:
- Egg wash – 1 egg beaten in 1-cup milk,
In another bowl:
- 1 cup flour with 1 tsp. salt added
In another bowl:
- 1 cup Panko or Plain breadcrumbs or cornmeal (you may need more than 1 cup)
Spoon the blended cheeses on a foil lined tray. Or use a small scoop to measure evenly. If the cheese is too soft, put the tray of cheese mounds in the freezer for about 20 minutes.
Shape each mound into a small ball. Dip each in the egg wash, and then dredge in the flour. Dip in egg wash again then dredge in the breadcrumbs. Dredge and press in the flour again. Set aside until all are done.
You can press them slightly to make mini patties or leave them round like balls or shape them like whole jalapenos.
Deep fry in hot oil in a deep heavy skillet or a deep fryer at 325°F to 350°F. Do them in batches. They are done in a little over 2 minutes per batch.
It will make about 2 dozens patties or balls.
