
This is a very simple vegetable side dish that goes well with almost any entree and is so easy and quick to prepare.
If you use fresh bunch spinach, cut off the tough stems then rinse well. Drain in a colander. They look like there’s a lot but they shrink considerably when wilted. One bunch of spinach may be enough for two servings if used as a side dish.
Ingredients:
- 1 bunch spinach or a bag of baby spinach
- 1 TBS butter
- 2 large garlic cloves, minced
- Salt and pepper
On medium heat, melt the butter in a skillet. Sauté the garlic until fragrant but not browned. Add the spinach a handful at a time and wait for them to wilt before adding some more. This is to prevent the spinach from falling off the skillet. Use tongs to turn them over and stir frequently to avoid burning the garlic on the bottom. The volume will decrease considerably. It’s done when the leaves wilt and become soft. Salt to taste and add pepper if desired.
