Razor Clams

(Tikhan or Tikan)

I found them frozen at an Asian Market.  I wish they were live but I have not found them at any store, not even frozen.  Maybe I was just not looking for them. The razor clams are found in the Atlantic and I’m not sure if they are found in the Gulf of Mexico or Galveston Bay.  I only found them sold live once at a fish market many years ago.  I’m not sure if they were locally caught or imported from other coasts.

Anyway, I thought I’d try them because they were very good as I remember them when I was growing up in the Philippines.  There are recipes I found online but I wanted to try it the way I remember it.  It is a simple dish with nothing but lemon juice (calamansi juice in the Philippines) and salt.

  • About 1 doz. clams
  • ¼ cup fresh lemon juice
  • About ½ tsp. salt
  • ¼ cup water

Simmer covered in a non-aluminum shallow pan for 1 to 2 minutes.  Don’t overcook them. Taste the juice and adjust the salt to your liking. 

Garnish them with chopped green onions for presentation if you like.
