
This recipe is better than my previous post of Southern Beef Tips and is a lot easier and quicker to make using the Instant Pot or a manual pressure cooker. The ingredients are somewhat the same as Southern Beef Tips with a little addition of seasonings that make it more flavorful.

This dish can use the less expensive cut of beef like top sirloin steak or rump roast or chuck roast. I used a small portion of a chuck roast, a little over 1 lb. , which is just right for two to four people. Of course, it is served over rice or mashed potatoes. Southern people like it over rice where you put the gravy and the meat on top of rice. For the purists, use short grain rice and cook it as Americans do. Or, you can use the parboiled instant rice in a box. I used long grain Jasmine rice here.
- 1 to 1 ½ lb. beef cut in 1” cubes
- Half of a medium onion, sliced thin
- 2 cloves garlic smashed and minced
- 1 packet Brown Gravy Mix with Mushroom (McCormick) or any brand
- 1-can beef broth or 1 ½ cups water, divided
- 1 can Cream of Mushroom Soup
- 2 bay leaves
- 1 tsp. Worcestershire sauce (optional)
- 1 tsp. Steak Sauce (A1)
- 2 tsp. Kitchen Bouquet Browning and Seasoning Sauce for later (optional)
- Salt, Black pepper
- Oil for cooking
- Flour for dredging
Cut the meat about 1″ cubes. Sprinkle salt and pepper on the meat evenly then dredge them in flour to coat all sides.
Heat 2 TBS oil in a skillet. Brown the meat on all sides when the oil gets hot. Remove the meat from the skillet and transfer to the Instant Pot. In the same skillet, sauté the garlic and the onions until the onions are cooked and translucent. Transfer them including the drippings to the Instant Pot with the beef. Add the beef broth or water, and all the other ingredients except the Kitchen Bouquet browning sauce and the salt and pepper. Mix them all up.
Set the Instant Pot to Meat/Stew for 30 minutes. Let it naturally release pressure. When you can open it, add the browning sauce to darken the gravy. If it needs salt, add it to your taste. If you have Maggi Seasoning, use 1 tsp. of it in lieu of salt.
