Bacon Wrapped Jalapeno Poppers

(It can be with crab or shrimp. May also be called Jalapeno Bombers)
Jalapenos With Crabmeat or Shrimp Poppers

I found some Texas sized Jalapenos at the grocery store.  They looked so fresh so I bought some.  They are so huge I thought they would be good bacon wrapped and grilled like jalapeno poppers. 

It just so happened I had some crab meat in the freezer. There are a few ways to do this.  One way is to mix the crab meat with some cheeses but this particular ones do not have cheese and they are as good.  If you like the cheese jalapeno poppers, see the recipe at the bottom.

Procedure:

  • First, burn the jalapeno skins on the stove top or the grill
  • When the skins blister, put them in a plastic bag and let it sweat
  • After a few minutes, put a sieve under the faucet and let the water run on the pepper while you pull the skins from them
  • Cut the peppers in half lengthwise then de-seed them.  Try not to tear the peppers when you pull the vein.  You can leave the veins if you like.
  • For four large peppers use 1 cup of crab meat.
  • Add 1/2 tsp. Cajun seasoning that has low salt content ( I used Ragin’ Cajun seasoning) to the crab meat and mix thoroughly
  • Divide the crab mixture into how many pepper halves you have.
  • Spoon the mixture in the pepper halves then
  • Wrap each with bacon slices.  (Your choice of thick or thin bacon)
  • Grill them or air-fry them or even oven bake them
  • If air-fried, bake or fry at 365° F for 5 minutes each side or until bacon is browned. 

Follow the same procedure if using shrimp. Lay one shrimp in each half jalapeno then wrap.  You can hold the bacon together with toothpicks if you have to.  This is good grilled and also good if you use the pickled whole jalapenos sliced in half and seeded.

To straighten the shrimp, score the undersides of the shrimps.

The fresh jalapenos taste better with the skins burned and removed.  They have better flavor than if you didn’t.

Jalapenos with Cheese Poppers

This recipe is good for 8 – 10 jalapeno halves

Blend together (with a fork):

  • 1-8oz. Cream Cheese
  • ¼ cup grated Monterey Jack cheese
  • ¼ cup grated Cheddar cheese
  • ¼ tsp. salt

With Crabmeat, mix the following with the cheeses:

  • ½ cup cooked, shelled crabmeat
  • 2 tsp. vinegar

Follow the procedure above for bacon wrapping and cooking.
