Slow Cooked Sirloin Top Steak

Sirloin top steak looks like it would be a scrumptious grilled steak but it is a tough cut of meat.  I used it to slow cook the Southern Beef Tips.  This is another recipe that you can make to use this piece of meat. 1 Sirloin top steak 1” thick, about 1 to 1 ½Continue reading “Slow Cooked Sirloin Top Steak”

Southern Beef Tips

This dish can use the less expensive cut of beef like Top Sirloin steak or Rump Roast.  For this recipe I used the Top Sirloin steak.  A piece of the 1” thick steak is a little over 1 1/2 lb., just right for two to four people.  Of course, it is served over rice orContinue reading “Southern Beef Tips”

Beef Jerky

Curing salt, also called Pink Salt or Prague #1 or Prague #2 is sodium nitrite/nitrate and is rarely found at the grocery stores anymore if at all. Sodium nitrite has been called Pink Salt because the powder has been dyed pink to avoid mistaking it as regular salt because accidental over dose may be hazardous.Continue reading “Beef Jerky”

Italian Roast Beef

(Chicago Style Roast Beef) This was one of my favorite lunches when I lived in Chicago many years ago. I worked in downtown Chicago and sometimes my co-workers and I would go out and walked around at lunch. I noticed a caterer or a food truck (same as a Taco Truck) parked on a busyContinue reading “Italian Roast Beef”

Meatloaf (Basic)

I made it plain and basic because my husband doesn’t like meatloaf made by other folks or from a diner or cafeteria. He says he likes my meatloaf because it doesn’t have all the other ingredients most people put in it like green peppers, celery, etc.  It does have most of those except I chopContinue reading “Meatloaf (Basic)”

Catfish Fried In Cornmeal

This is one of the old time favorites here in Texas. My husband is one of them who likes to have it often. This is what he likes to order when we eat at a seafood restaurant. I had to learn to make it at home because he will not eat or enjoy any fishContinue reading “Catfish Fried In Cornmeal”

Calamari (Squid)

This recipe is from Jodie, my daughter-in-law who is a chef and served it to my husband and I as an appetizer when we visited her at the restaurant in California where she worked.  It was delicious. This is very easy to make if you can find squid frozen in boxes at the grocery store.Continue reading “Calamari (Squid)”
