This is a popular bean dish in the Philippines and is one of our favorites here. But the dish in the picture is an Americanized version. That is, the ingredients I used here are not the original ingredients if it were cooked in the Philippines. My American husband accepts it and he even loves it. Ratatouille
Vegetable Medley It is summer again and I have several varieties of tomatoes growing in the garden. I strolled in my garden early this morning and picked some eggplants, tomatoes along with some basil, oregano and kangkong (swamp spinach) and decided to make Ratatouille. Traditionally, Ratatouille does not have Kangkong but I have some soContinue reading “Ratatouille”

The people are called Ilocanos and theyContinue reading “Pinakbet”
Crab-filled Eggplant Relleno
(Tortang Alimasag sa Talong) Crab omelet is not an uncommon dish. As a matter of fact, the cooked crabmeat is stuffed in the cleaned crab shells (carapace) and fried as an omelet in the Philippines, much like the method as the Chile Relleno. It is called crab cakes or stuffed crabs here in the U.S.Continue reading “Crab-filled Eggplant Relleno”
Pork Sarciado
(Similar to Pork Menudo, Pork Guisado, Pork Mechado or Pork Afritada) To be honest, I don’t know the difference between sarciado, afritada, mechado, guisado and menudo. To me they are very similar except for the additions or subtractions of some ingredients like potatoes, carrots, bell peppers, peas, etc. I think basically, the names are interchangeableContinue reading “Pork Sarciado”

Sarciadong Isda
(Or Fish Sarciado) Most Filipinos make this sauce with beaten eggs, almost like a Ranchero omelet but a little runny. I never liked it with eggs so mine has no eggs and I like it almost dry when the tomatoes are cooked very well. The tomatoes are cooked almost like a tomato puree consistency exceptContinue reading “Sarciadong Isda”
Butter Fried Fillets of Fish
Swai (Pangasius), Red Snapper or Any Fish Fillet I was not very familiar with Swai fish or Pangasius at first. They are farmed in Asia, specifically Vietnam and Thailand for now, then exported here filleted and frozen in packages and sold at the grocery stores. From what I read about them they are related toContinue reading “Butter Fried Fillets of Fish”

Beef Pepper Soup
This soup is a comfort food as far as I am concerned. You can make it with rice, Fideos or broken up angel hair spaghetti, about 1″ to 2″ long. It is easy and quick to make especially if in a pinch or too tired to make a big meal. It is a meal inContinue reading “Beef Pepper Soup”
