(Similar to Smothered Beef In Gravy and Chicken Fried Steak)

- 1 piece sirloin steak or NY Strip Steak ¾” to 1” thick, slice in thin strips across the grain, about ¼ in. thick.
- Flour
- 1 egg
- ½ cup milk
- 1 tsp. salt
- ¼ tsp. black pepper
- 1/4 tsp. Perfect Pinch Garlic & Herb Seasoning or Hidden Valley Ranch Seasoning mix (optional)
- Oil for frying
Put about ½ cup flour in a plastic bag. Drop in the meat pieces and shake making sure everything is coated. Shake off excess and drop the dredged meat in a bowl of beaten egg mixed with the milk.
Add another ½ cup flour (or more) in the same bag and add the salt, pepper and the garlic seasoning or the Ranch seasoning mix. Shake to mix.
Heat ¼ inch oil in a skillet.
Place the meat pieces one at a time in the bag of seasoned flour and shake to coat. Do this in batches to make sure the meat pieces are well coated. Transfer separately in a cookie sheet until all are floured.
Fry in the oil one side at a time until well browned. Do not over crowd the meat. Drain on paper towel.
Make milk gravy with the dripping if desired and serve separately for dipping. A-1 Sauce or BBQ sauce is also good for dipping. Another excellent choice for dipping is Ranch salad dressing. For more intense seasoned meat, sprinkle salt and pepper and a pinch of garlic seasoning on the meat and mix well. Let stand about 30 minutes before proceeding with the recipe.
