Steak With Greenbeans Casserole

We came home from work one evening and I could not think of anything to cook for dinner.  I did not have any meat thawed that evening either.  I looked for something to have for dinner in the fridge and saw some leftovers.  There was a steak leftover from the night before that was a little too salty (I got a little carried away with shaking the salt box) and I could not make up my mind what to do with it.  It was almost a whole piece of steak and would be good to make soup with but I was not in the mood for a tomatoey soup that evening. 

I thought of making Stroganoff with it which would be a good choice but the Cream of Mushroom is also seasoned well and if mixed with the salty steak would make the dish even saltier.  Also, the can of Cream of Mushroom soup would be too much for the amount of meat I had to cook it with.  Then I saw a leftover greenbeans casserole in the fridge and sparked an idea.  It has everything I needed to make the Stroganoff and I did not have to open a can of Cream of Mushroom that I would not be able to use all. It even had a bonus of greenbeans.

I’m really very proud of myself because it turned out so good.  I rinsed off some of the surface salt from the steak and cut it up in cubes.  I put it in a pan and dumped the leftover greenbeans casserole with it that was just a little more than a cup, added a small can of mushroom pieces and some milk.  Stirred it and simmered only to heat through.  I cooked some noodles and poured the Stroganoff look-alike over the noodles and we had a delicious meal. 

I don’t know what to call this dish but it is much better than the real Stroganoff even if it didn’t have sour cream in it. 

I was also able to get rid of some plastic containers with leftovers in the refrigerator.
