Eggs with fried corn tortillas (Mexican breakfast dish)

This is the same as Huevos Rancheros but with corn tortillas.
RECIPE:
- 2 Corn Tortillas
- 4 eggs, lightly beaten
- 1 large Roma tomato diced
- ¼ medium onion, diced
- 1 clove garlic, minced or crushed
- 1 fresh jalapeno pepper, seeded and minced
- ¼ green bell pepper diced and/or diced ¼ red bell pepper
- ¼ tsp. salt
- dash black pepper
- Cooking oil
- Grated Mexican blend cheese or Cheddar
In a non-stick skillet, heat 2 TBSP oil. Fry 2 corn tortillas, one at a time until it is not limp anymore. You want it crisp but not burned. Take it out of the oil and put it on a cutting board. Set aside to cool. When cooled, break them up into small squares. Break them by hand or cut into the two pieces one inch apart one way then one inch apart the other way. Set aside.
Slightly beat the eggs with about 1/8 tsp, salt and set aside.
Sauté together the garlic, onions and bell peppers until the onions are soft. Add the tomatoes and stir for half a minute then add the eggs. Let it cook for a couple of minutes then turn over a portion at a time until the eggs are set. Add the fried corn tortillas and jalapeno peppers and mix them in. Add a dash of pepper and add the cheese. Serve with heated corn tortillas, refried beans and salsa verde and/or red salsa.
