Huevos Rancheros

I think this is what they call Huevos Rancheros at Mexican Restaurants here in Texas but this is also a Filipino scrambled egg, commonly eaten for breakfast in the Philippines, which can be eaten with fried rice, pandesal or toast. But I’m sorry that I forgot what it is called there.

There is also a popular breakfast dish in Mexican restaurants called Migas.  It is the same as Huevos Rancheros except they add pieces of broken up corn tortillas fried to crispness.   

When we first came to the U.S. we lived in the Midwest where Mexican or Hispanic foods were not commonly known yet.  While we were on a weekend tour we stayed overnight in a higher end motel. The next morning my ex-husband (my children’s father) ordered an omelet at the motel’s restaurant that was not on the menu. He did not know exactly what they called it here so he said “Spanish Omelet” and described what’s in it.  He practically told the chef or cook how to make it or what was in it and they made it, believe it or not. 

Actually, I learned lately that this is not the authentic “Spanish Omelette” because Spanish Omelette is fried potatoes mixed with eggs, sometimes with onions and it is not an omelette per se but like a frittata or a quiche without crust.

RECIPE:

  • 4 eggs, lightly beaten
  • 1 large Roma tomato diced
  • ¼ medium onion, diced
  • 1 clove garlic, minced or crushed
  • 1 pickled jalapeno pepper, diced or
  • ¼ c diced green bell pepper and/or diced red bell pepper
  • ¼ tsp. salt
  • dash black pepper
  • butter or bacon grease
  • Shredded Mexican blend Cheeses or Cheddar cheese

In a non-stick skillet, heat 1 TBS. butter or 1 TBS. bacon grease.  Sauté together all the ingredients except the eggs and tomatoes until the onions are soft.  Add the tomatoes and sauté for a half a minute. 

Add salt to eggs then lightly beat them and pour it in.  Let it cook for a couple of minutes then turn over a portion at a time until the eggs are set.  Add a dash of black pepper. Add some cheese if desired.

Wrap the prepared eggs in tortillas with some fried bacon to eat as breakfast burritos.  Have some homemade or canned salsa on the side, green (salsa verde) and/or red.
