Jalapeno Bombers

With or without Crab meat (May also be called Jalapeno Poppers)

These pepper poppers are delicious.  They are not hot, at least not to me.  Maybe they are just the pepper hybrid that they are but they have very good flavor.  I choose the large ones.  They look like the bigger and fatter they are, the less hot they are.  Maybe I’m right. 

This recipe is for 12 large jalapenos, cut lengthwise in half. Scrape the seeds out including the veins.  Those are what make the peppers hot.

Blend together (with a fork):

  • 1-8oz. Cream Cheese
  • ¼ cup grated Monterey Jack cheese
  • ¼ cup grated Sharp Cheddar cheese
  • ¼ tsp. salt

With Crabmeat, mix the following with the cheeses:

  • ½ cup cooked, shelled crabmeat
  • 2 tsp. vinegar

Spoon the blended cheeses into each jalapeno half and spread and press it along the length of the jalapeno. 

You will need in separate bowls:

In one bowl:

  • Egg wash – 1 egg beaten in 1-cup milk,

In another bowl:

  • 1 cup flour with 1 tsp. salt added

In another bowl:

  • 1 cup Panko or Plain breadcrumbs or cornmeal (you may need more than 1 cup)

Dip each in the egg wash, and then dredge in the flour.  Dip in egg wash again then dredge in the breadcrumbs.  Dredge and press in the flour again.  Set aside until all are done.

Deep fry in hot oil in a deep heavy skillet or a deep fryer at 325°F to 350°F. Do them in batches. They are done in a little over 2 minutes per batch.

Some like to put crumbled bacon with the cheese. Crab meat filled fried jalapenos is excellent.

You can also try to use pickled jalapenos instead of fresh.  I think I like that tart flavor of the pickles too.
