Mahi Mahi Fried in Light Batter

Here’s another successful and delicious concoction. 

I bought a large piece of frozen Mahi Mahi fillet at Costco, knowing that Mahi Mahi is one of the best tasting fishes, not only to me but also to those who are fond of eating fish. I cooked half of that fillet for my husband and myself that evening. I fried it in butter and lemon like pan fried salmon and it should have tasted very good but we were disappointed.  It tasted old.  Who knows how long it had been frozen until it got to my kitchen and table?

I kept the other half of the large fillet in the freezer for later and after a few months or maybe a year or so, I wanted to cook fish one night so I took out a package of frozen fish thinking it was salmon but instead, it was the forgotten half of the mahi mahi filet.

I was not sure if I should even cook it or just throw it away because of the bad experience from the other half. I took a chance but I opted to fry it in batter and see what would happen.  I’m glad I did and the result was awesomely delicious.  No old fish taste at all.

In a small bowl, mix:

  • ½ cup flour
  • 1 TBSP cornstarch (optional)
  • ½ tsp. salt
  • ¼ tsp. black pepper
  • 1 tsp. Baking powder
  • ¼ tsp. MSG (optional)
  • ½ cup water

Slice the fish in thin strips.  Heat cooking oil in a small deep pan or a wok, deep enough to deep fry pieces of the fish. Dip the fish pieces in the slurry one at a time then drop it in the hot cooking oil (about 365º F) one at a time.  Do this in batches making sure they don’t stick to the bottom.  Fry until slightly browned then drain on paper towels or a rack.

You can also drop all the fish pieces in the flour slurry and pick them up one at a time with chopsticks or fingers then drop it in the hot cooking oil.

Tip: To avoid food sticking on the bottom of the pan, heat the wok or pan until hot before adding the cooking oil.
