Basil Pesto

I gathered a few basil leaves from the garden and made a little pesto.  I don’t quite know what to eat this with but it tastes wonderful.  It is good with pasta or Italian bread.  It is also good on pizza. 

  • About 2 cups of basil leaves, packed
  • 2 to 3 cloves garlic
  • ¼ cup nuts – traditionally it calls for pine nuts but you can also use walnut.
  • About ¾ cup Virgin Olive Oil.
  • Salt and pepper
  • Parmesan cheese or Romano cheese

Put the basil leaves, garlic and nuts together in a food processor.  Process, pulse and scrape every so often.  Drizzle the oil slowly while processing and check if it is ground and pasty enough.  Add about 1 TBS grated Parmesan or Romano cheese.  Whirr one more time to mix.  Taste and add salt and pepper to your liking.  Add more cheese if you like.
